The Fujiwara Teruyasu Denka Santoku 18 cm Aogami Super is a fully handcrafted Japanese kitchen knife produced in Tokyo by master blacksmith Teruyasu Fujiwara. The Denka line represents the highest level of his forging and heat treatment expertise.
The blade features an Aogami Super carbon steel core, heat treated to approximately 65–66 HRC. This results in outstanding edge retention and exceptional cutting performance. Reactive iron cladding emphasizes the traditional construction and requires proper care and drying after use.
Finished with Tsuchime and Kurouchi, the blade retains a forged surface texture while offering partial surface protection. Fujiwara knives are known for their extremely thin grind behind the edge, delivering aggressive, clean cuts. The Santoku profile provides versatility across vegetables, meat, and fish.
The magnolia wood handle with buffalo horn ferrule offers balanced handling and comfortable control, especially when using a pinch grip.
