The Hinokuni Kurouchi Gyuto 21 cm Shirogami #1 is a traditionally forged Japanese chef knife designed for versatile kitchen use. The Gyuto profile allows precise slicing of meat, fish, and vegetables while maintaining strong cutting control.

The blade features a Shirogami #1 carbon steel core, valued for its high purity and ability to take an extremely refined edge. Heat treated to approximately 62 +/-1 HRC, it delivers excellent cutting performance and straightforward sharpening. Iron cladding enhances traditional construction while requiring proper drying and maintenance due to its reactive nature.

The retained Kurouchi finish preserves the dark forged surface, giving the blade a raw aesthetic and partial surface protection. A thicker spine at the heel transitions into a thinner cutting section for stability and balanced performance.

The cherry wood handle with synthetic ferrule keeps the knife well balanced and practical for daily use, reflecting traditional Japanese carbon steel craftsmanship.
