The Hinokuni Kurouchi Santoku 180 mm Shirogami #1 is a Japanese all-purpose knife designed for everyday kitchen work. The Santoku profile is suitable for cutting vegetables, meat and fish, combining a wide blade with a practical length. Its generous cutting surface makes it effective for slicing, chopping and transferring prepared ingredients.
The blade features a Shirogami #1 carbon steel core, valued by Japanese knife enthusiasts for its ability to achieve a very sharp edge and for easy sharpening. Hardened to approximately 62 +/- 1 HRC, it maintains precise geometry and reliable edge stability. The iron cladding gives the knife a traditional character but requires regular maintenance. After each use, the blade should be thoroughly washed and dried to reduce the risk of corrosion.
The blade is finished with a Kurouchi surface, a dark forged finish traditionally left after the forging process. This finish emphasizes the handcrafted character of the knife and gives it a classic Japanese appearance. The double bevel edge and balanced geometry provide smooth handling during various kitchen tasks.
The cherry wood handle is fitted with a synthetic ferrule. This simple traditional construction offers a comfortable grip and good balance. With a weight of 198 g, the knife provides stable handling, especially when preparing larger amounts of vegetables and other ingredients.
