Kanetsugu Miyabi Issin is a series of elegant knives made of high-carbon AUS-8 stainless steel in a SAN-MAI (“three-layer”) construction. The SAN-MAI technique means that the center of the knife (“hard core”) is made of high-carbon “AUS-8” steel, which is covered with soft “SUS-410” steel. Thanks to this method, the hard AUS-8 steel core is protected by outer layers of soft SUS-410 steel, which also provides additional flexibility.
