Kanetsugu Pro-M Sujihiki 240 mm — Characteristics:
Kanetsugu Pro-M is a series of ultra-sharp kitchen knives, made entirely of AUS-8 molybdenum-vanadium stainless steel. When undergoing heat treatment, on the Pro-M series knives, the brand Kanetsugu subjects them to a special heat treatment (known as “sub-zero treatment”), during which the knives are immediately cooled to -70°C. Thanks to this process, the blades achieve a sufficiently high hardness of 59+/-1 HRC. The Pro-M series knives have exceptional cutting properties, which are due to the good heat treatment of the steel and the convex grind, known as “hamaguri ba,” which allows for very easy and precise separation of food from the blade. The finish of these knives, the blade profile, and the fit of the handle are of a very high standard.
The handle of this knife is made of dark Pakka wood, which has been impregnated and is completely moisture resistant. The ergonomically contoured handle is very comfortable and provides a secure grip, even during long periods of work in the kitchen.
The brand, which has been in existence for over 100 years, was founded by Matsujiro Kawamura, a descendant of Kanetsugu, the famous samurai sword maker (1336-1392). Seki Kanetsugu is a manufacturer from Seki, Japan, a city famous for the production of kitchen knives.
