












The Kanetsugu Zuiun Kiritsuke 180 mm is a traditional Japanese-style knife. The shape of its blade makes it a versatile tool that is perfect for both chopping vegetables and preparing fish.
The impressive ZUIUN Damascus knife series was created to celebrate the 100th anniversary of the Seki Kanetsugu brand.
The core of these knives is forged from SPG2 (R2) powder steel, which is an excellent choice for the production of kitchen knives — an ideal compromise between high hardness, ease of sharpening, and long-lasting sharpness. The knives are made using the SAN-MAI technique, which means that the SPG2 (R-2) powder steel core is covered with 63 layers of Damascus steel with a beautiful, contrasting pattern. During heat treatment, these blades are given a hardness of 62-64 HRC, which guarantees long-lasting sharpness. SPG2 steel is relatively easy to sharpen. Kanetsugu ZUIUN knives offer some of the best cutting properties — a fairly thin blade combined with a convex Hamaguri Ba grind will satisfy even the most demanding users.
The unique handle has a heptagonal (seven-sided) shape and is extremely comfortable, even during prolonged use of the knife. It is made of Pakka wood and has a beautiful decorative pin. All knives in this series are packaged in an attractive wooden box, making them ideal as gifts.
Seki Kanetsugu is a knife manufacturer in Seki, Japan, whose ancestor was Kanetsugu (1336-1392), a famous maker of samurai knives. The brand was founded in 1919 and is currently one of the oldest kitchen knife manufacturers in Japan.
