The blade of the Masamoto KK Yanagiba Kitchen Knife measures 270 mm. It is a basic knife that is useful in the work of every sushi master. Its narrow and long blade (traditionally, with a single bevel) facilitates cutting and slicing. It is used primarily for tasks related to the preparation of sushi and sashimi. It originates from the Osaka (Kansai) region.

Minosuke Matsuzawa, who founded Masamoto Sohonten, began manufacturing kitchen knives in 1872. From the very beginning, his dream was to create a line of perfect knives – today, we can all agree that he has achieved this goal. The Masamoto brand of knives is known worldwide as a synonym for perfection. The brand's accessories are highly regarded by chefs and other users in many countries. The KK Kasumi collection features a double-layered blade with a core made of Shiro-ko #2 carbon steel (also known as White Steel No.2). The core is surrounded by soft steel. These knives are distinguished by the manual forging and finishing process. It is also worth mentioning that the heat treatment used makes the blades extremely hard (62-63 HRC). The highest quality of these Japanese-style knives goes hand in hand with very long-lasting sharpness. They are the perfect tools for sushi masters, cooking enthusiasts, and sushi lovers. The handle of each knife is D-shaped and made of magnolia wood. It also has a buffalo horn ferrule finish. When using kitchen knives from the Masamoto KK Kasumi line, it is important to remember that they are not stainless. Therefore, they require proper and regular care. The name of the Kasumi series literally means “fog” or “mist.” It is associated with the unique, “misty” finish of these laminated knives. The elegant boxes in which they are packaged can easily serve as gift boxes.
