Handcrafted Masutani Japanese kitchen knives are the work of a skilled blacksmith from Echizen (in Fukui Prefecture). They can be compared to much more expensive knives, yet offer excellent value for money. The high-carbon VG-10 stainless steel used to make the core of the knives ensures their durability. The outer layers of the blade are made of Damascus steel (more precisely, 31 layers), which, combined with the unique “Tsuchime” finishing technique, gives a unique and beautiful hammered effect. Thanks to heat treatment, the hardness of the blades reaches 61-62 HRC. They also retain their sharpness for a long time. The handles are made of Pakka wood, which is known for its high resistance to moisture and temperature. It has an attractive blue color.
