








Miyagoshi Syouki 3000 – Finishing Stone for sharpening (#3000)
Miyagoshi Seito (宮越製陶) is a Japanese manufacturer based in Kyoto, specializing in the handcrafted production of sharpening stones using the vitrification method. The Syouki 3000 model is a high-end finishing stone, designed for the final stage of sharpening, where precision and smoothness of the cutting edge are crucial to achieving full sharpness.
The production process uses high-purity aluminum oxide (Al₂O₃) abrasives, which are bound into a structure using a high-temperature molten binder. The whole is formed under high pressure and then fired at a temperature reaching 1300°C. The resulting stone is characterized by high durability, resistance to chemical and atmospheric factors, and very stable working flatness.
Application of #3000 grit
#3000 grit (grain size approx. 4.5 microns) is used for the final stage of sharpening – smoothing the blade surface, removing burrs, and improving the sharpness and finish of the edge. This stone is ideal for:
- after sharpening with 400–1000 grit,
- for kitchen knives, craft tools, and steels of varying hardness,
- in applications where not only sharpness, but also edge durability is important.
