








Morihei Hishiboshi Hi 1000 is a Japanese medium-grit stone. It is used for daily maintenance of kitchen knives, especially those made of high-carbon steel. The #1000 grit is great for keeping the blade sharp and getting it ready for smoothing out on stones with a higher grit level.
The stone is part of the Morihei Hi (Hishiboshi) series, which was created to imitate the characteristics of natural Japanese stones (JNAT). The stone is made of natural stone dust, so it offers very good feedback during sharpening and uniform, predictable abrasion. When you use it, it makes an abrasive slurry that makes sharpening much more effective. You should not remove it while you are using it.
This model is a typical "splash & go" stone. This means that it is ready for use after you moisten it with water. You do not need to soak it for a long time. However, to make it more comfortable and "open" the working surface, you can gently soak it for 1-2 minutes or rub it with a Nagura stone or a leveling plate.
