The Morihei Hishiboshi Hi 12000 is a finishing stone with a very fine grit, designed for final polishing of the cutting edge of kitchen knives. Used as one of the last steps in the sharpening process (after #6000 or #8000), it allows you to achieve maximum sharpness, a distinct polish, and a high-contrast finish, characteristic of the classic kasumi effect.
Like the other stones in the Hishiboshi Hi series, the 12000 model contains an addition of natural materials, which significantly affects the quality of contact with the blade. During use, the stone creates a fine-grained slurry that allows for precise control of each movement and promotes a refined finish, especially on laminated blades (carbon steel + soft iron).
Splash & Go stone – ready to use after a single moistening with water. It does not require soaking, which increases the convenience of use. To improve performance, it is recommended to wipe the surface with a leveling plate or Nagura stone. Do not remove the slurry during sharpening – it contains active abrasive particles that are crucial in the polishing process.
The Morihei Hi 12000 provides a high level of precision and controlled abrasion, without the risk of excessive material removal. This stone is suitable for users who expect not only functional sharpness, but also a highly aesthetic finish. Compared to the Shapton and Naniwa series, it is distinguished by its greater thickness (25 mm) and extended lifespan, which translates into greater stability and longer use.
