The Naniwa Sharpening Guide is a very useful and easy-to-use tool that helps maintain a consistent angle when sharpening knives on sharpening stones. It solves a problem for many people, who consider this to be the most difficult part of the entire task.
Simply slide the guide onto the back of the knife, approximately in the middle of the blade. Once you have made sure that the guide is tightly clamped and the blade is completely seated in it, you can start working.
The Naniwa Guide for sharpening Japanese knives is not adjustable. The sharpening angle it provides depends on the width of the knife – it is approximately 15º (the wider the knife, the smaller the sharpening angle). The guide is designed for use with knives that are over 2.5 cm high.
