





The Nigara Hamono VG-XEOS Kurouchi Gyuto 210 mm Ebony is a Japanese chef's knife designed for a wide range of kitchen tasks, including cutting meat, fish, vegetables and preparing larger ingredients. The Gyuto profile combines the versatility of a classic chef knife with Japanese blade geometry, offering excellent control, precision and comfortable handling.
The blade features a VG-XEOS stainless steel core developed for high edge retention, wear resistance and stable cutting performance. Hardened to approximately 63 +/- 1 HRC, it allows a thin blade geometry while maintaining reliable edge stability. The stainless steel core and stainless cladding provide excellent corrosion resistance and make the knife easier to maintain during intensive kitchen use.
The blade combines a Tsuchime hammered finish with a Damascus pattern, creating a distinctive handcrafted appearance. The hammered surface helps reduce food sticking during cutting, while the layered finish adds character to the blade. The octagonal ebony handle is fitted with a buffalo horn ferrule. These natural materials emphasize the traditional Japanese design while providing a secure and comfortable grip.
