The Bunka profile combines the versatility of a Santoku with a distinctive pointed tip, providing excellent control for detailed cuts, portioning and precise kitchen work. Its compact 177 mm blade offers great agility, while the wide blade profile makes transferring ingredients easy.
The blade features an Aogami #2 carbon steel core, valued by Japanese knife enthusiasts for its excellent cutting performance, ease of sharpening and ability to maintain a refined edge. Hardened to approximately 63 +/- 1 HRC, the blade provides precise geometry and reliable edge stability. The carbon steel core is reactive and requires proper care, so the knife should always be washed and dried thoroughly after use.
