The Yoshimi Kato Bunka 170 mm Damascus SG2 Octagon is a precise Japanese Bunka knife designed for cutting vegetables, meat and fish. Its distinctive pointed profile allows detailed cutting techniques and provides excellent control over the blade. The compact 170 mm size makes the knife agile and practical for both home kitchens and demanding culinary tasks.
The blade features an SG2/R2 powder steel stainless core, valued for its exceptional wear resistance, long edge retention and ability to achieve refined blade geometry. Hardened to approximately 63 +/- 1 HRC, it maintains a thin cutting edge while offering reliable stability. The stainless steel core and stainless cladding provide excellent corrosion resistance and make the knife easier to maintain.
The blade is constructed with a 33-layer Damascus structure and finished with a dark Damascus surface. The layered design highlights the handcrafted character of the knife, while the refined geometry ensures smooth cutting performance. The double bevel edge and balanced blade thickness provide clean cuts and comfortable handling.
The octagonal cherry wood handle is fitted with a pakka wood ferrule. This traditional Japanese handle design offers a secure grip and excellent control. With a weight of 131 g, the knife remains lightweight, well balanced and comfortable during extended food preparation.
