The Yoshimi Kato Damascus SG2 Chef's Knife (240 mm) is a versatile tool, ideal for a variety of culinary tasks. It is perfect for both chopping vegetables and cutting larger pieces of meat, ensuring precision and comfort.
Each piece is hand-forged by Yoshimi Kato, a master craftsman and son-in-law of Hiroshi Kato. His craftsmanship was shaped under the guidance of outstanding creators, such as Kanehiro and Hiroshi-San. In addition to his collaboration with the Masakage brand, Kato also creates his own line of knives, which are highly regarded by professionals and cooking enthusiasts.
The blade is made of modern SG2 powder steel, achieving an impressive hardness of 63 HRC on the Rockwell scale. The core is surrounded by 32 layers of stainless Damascus steel, which create a striking, dark pattern obtained through the etching process.
The ergonomic, octagonal handle guarantees a secure grip, even with wet hands. Made of natural cherry wood and finished with a Pakka wood ring, it harmoniously combines traditional style with durability and comfort of use.
