Fine Whetstones
Fine whetstones are sharpening stones with grit sizes ranging from #3000. They are crucial for the final quality of the knife. They make the edge very smooth, sharp, and light.
Working with a finishing stone is both a technical process and a pleasant ritual. Each time you move the knife on the stone, the blade gets smoother until it easily cuts through vegetables or meat. Fine stones are not meant for heavy work. Their job is to make cutting easier and show off the quality of the blade.
Depending on your preferences, you can finish sharpening at grit #3000, which achieves a slightly aggressive edge ideal for the kitchen, or go further – up to #6000–#8000 – to achieve an almost mirror-like finish, particularly valued in traditional Japanese sushi and sashimi knives.
