





The Nigara Hamono VG-XEOS Kurouchi Santoku 170 mm Ebony is a versatile Japanese Santoku knife designed for everyday preparation of vegetables, meat and fish. Its well balanced Santoku profile excels at slicing, chopping and portioning, while the tall blade makes transferring ingredients from the cutting board quick and convenient. The 171 mm blade length makes it suitable for both home and professional kitchens.
The blade features a VG-XEOS stainless steel core, a modern steel developed to provide excellent edge retention, wear resistance and consistent cutting performance. Hardened to approximately 63 +/- 1 HRC, it supports a thin cutting geometry while maintaining excellent edge stability. The stainless steel core and stainless cladding provide outstanding corrosion resistance and make the knife easy to maintain for regular kitchen use.
The blade combines a Tsuchime hammered finish with an elegant multilayer Damascus pattern, creating a distinctive handcrafted appearance while helping reduce food sticking during cutting.
