





The Hinokuni Kurouchi Santoku 210 mm Shirogami #1 is a traditional Japanese all-purpose knife designed for vegetables, meat and fish preparation. The Santoku profile combines versatility with Japanese blade geometry, allowing precise slicing, chopping and portioning across a wide range of ingredients. The longer 212 mm blade provides additional working surface compared to standard Santoku knives.
The blade features a Shirogami #1 carbon steel core, valued for its ability to achieve an extremely sharp edge and its excellent sharpening characteristics on water stones. Hardened to approximately 62 +/- 1 HRC, it offers precise cutting performance and reliable edge stability. The carbon steel core and iron cladding are reactive and require proper maintenance. The knife should always be washed and dried thoroughly after use to reduce the risk of corrosion. The traditional iron cladding also develops a natural patina over time.
The blade is finished with a Kurouchi finish, a dark rustic surface created during the forging process. This finish emphasizes the traditional character of the knife while contrasting with the polished cutting edge. The double bevel edge and balanced geometry provide smooth handling, while the solid construction offers stability during everyday kitchen tasks.
The cherry wood handle is fitted with a synthetic ferrule. The natural wood provides a comfortable grip and complements the traditional blade design. With a weight of 220 g and a robust construction, the knife offers excellent control and stability during food preparation.
