





The Yoshimi Kato Nakiri 170 mm Damascus VG-10 Rosewood is a Japanese vegetable knife designed for precise and efficient preparation of fresh produce. The traditional Nakiri profile features a straight cutting edge that makes full contact with the cutting board, allowing smooth slicing, chopping and shredding. Its tall blade also makes it easy to transfer prepared ingredients directly into the pan or bowl.
The blade is built around a VG-10 stainless steel core, a steel highly regarded for its balance of edge retention, corrosion resistance and sharpening performance. Hardened to approximately 61 +/- 1 HRC, it supports a thin blade geometry that delivers clean, accurate cuts while maintaining excellent edge stability. The stainless steel core and stainless cladding make the knife easy to maintain and well suited for everyday kitchen use.
The blade is finished with an elegant 63 layer Dark Damascus pattern, creating a deep and distinctive layered appearance that reflects the craftsmanship associated with Yoshimi Kato knives. The thin blade profile and double bevel edge provide smooth cutting performance and excellent precision, particularly when working with delicate vegetables.
