The Nigara Hamono VG-XEOS Kurouchi Petty 150 mm Ebony is a Japanese utility knife designed for precision kitchen tasks. Its 150 mm blade is ideal for peeling, trimming, slicing fruit and vegetables, preparing herbs, and handling detailed meat and fish preparation. The slim profile and lightweight construction provide excellent control, making it an ideal companion to a larger Gyuto or Santoku.
The blade features a VG-XEOS stainless steel core developed for outstanding edge retention and excellent wear resistance. Hardened to approximately 63 +/- 1 HRC, it supports a thin cutting geometry that delivers clean, precise cuts while maintaining excellent edge stability. The stainless steel core and stainless cladding make the knife easy to maintain and well suited for everyday use, requiring less attention than traditional carbon steel blades.
The blade combines a Tsuchime hammered finish with an elegant Damascus pattern that reflects Nigara Hamono's traditional craftsmanship. The hammered texture adds visual depth while the Damascus layers enhance the refined appearance of the blade. A double bevel edge and thin geometry provide smooth cutting performance and precise control during detailed kitchen work.
The octagonal ebony handle is fitted with a traditional buffalo horn ferrule, offering durability, balance and a secure grip. Weighing only 93 g, the knife feels exceptionally agile and comfortable, allowing precise movements while reducing fatigue during extended food preparation.
